While teaching in the couture department, Gilbreth observed the work of the couture seamstresses from their own vantage point and noted that the standard of workmanship was very high. It was an essential part of a couturier to know the work of every assistant in his shop and to be certain that every seamstress did an excellent job. At first, Gilbreth thought that the couture workroom was the most modern, progressive, and efficient department in the Bon Ton, but his interest soon turned to the couture department that produced the clothing for the department heads. Gilbreth observed that the department heads, who themselves had been trained in couture, were deeply conservative about what constituted the best style for the women of the Bon Ton.
